We took a family walk today and enjoyed the cool, crisp air of autumn, the golden sun, and the colored leaves. There was something about being outdoors that made me hungry for baked apples. When we returned, I immediately began peeling and slicing apples for a healthy version of apple crisp.

Fall is such a great time to enjoy the many varieties of apples. I love to try all different kinds to experience the flavors and crispness (not to mention their delicious aromas). I enjoy using them in many different recipes and usually eat one every day.

I cook apples in my oatmeal, slice them to dip in yogurt, and fill them with peanut butter. I take them on the road for snacks, bake them for dessert, and add them to salads.

Apples not only taste great, they’re healthy! They’re full of antioxidants, which can help protect you from heart disease and cancer, and protect your bone health. They’re full of fiber, which can aid in weight loss and bowel function.

Add apples to your daily menu. Try apple oatmeal muffins, apple pancakes, apple-walnut salad, baked apples and sweet potato, or a simple apple on the go.

Here’s my easy Apple Crisp recipe:

4 apples peeled and sliced
1 cup rolled oats
1-2 Tbs. milk
2 packets Splenda
Cinnamon
Vanilla

Place apples in a 9×9 baking dish. Sprinkle with cinnamon and one packet of Splenda. Stir oats with milk, cinnamon, vanilla and Splenda. Spread over sliced apples. Bake at 375 for 30 minutes. Serve with milk, vanilla yogurt, or fat free whipped topping.
