5 Hot Ways to Enjoy Veggies

I love salads. In the warmer weather I eat them every day, at least once if not twice a day. Since the weather has turned frigid, I’m not so inclined to eat cold foods. I want something hot to warm my insides!

Here are 5 of my favorite ways to enjoy hot, cooked vegetables.

  1. Roasted vegetables: cut an assortment of veggies into chunks, add sliced onion and pepper, and fresh mushrooms. Sprinkle with olive oil and seasonings and bake until vegetables are tender.
  2. Vegetable soup: chop up lots of onions and peppers, zucchini, cauliflower and broccoli, green beans, and tomatoes and throw them in a pot with lots of nonfat chicken broth. Add herbs and spices and simmer until vegetables are tender.
  3. Sautéed vegetables: sauté fresh asparagus spears, sliced onion and mushrooms, and minced garlic in a pan with a little olive oil until vegetables are tender.
  4. Baked chicken and vegetables: layer boneless, skinless chicken breasts in a baking dish with quartered potatoes and carrot chunks. Add water and Italian seasoning and bake until cooked through.
  5. Creamed cauliflower: steam or boil cauliflower florets until soft. Drain water and place cauliflower in a blender with a tablespoon of nonfat milk and sour cream, onion powder, and salt and pepper. Puree until creamy.
