5 Easy Ways to Make Plain Chicken Tasty

Chicken breast is a lean protein choice great for your diet. But if you’re like me, you probably get tired of plain baked chicken day after day.

Fortunately, you can dress chicken up with lots of flavor and few calories. Here are some of my favorite recipes to turn plain chicken into tasty chicken.

  1. Chicken with Italian Tomatoes. Place four skinless, boneless chicken breast fillets in a baking dish. Pour one can of Italian-style diced tomatoes on top. Cover and bake at 400 degrees for one hour. (You can throw potatoes in the oven at the same time.)
  2. Pizza Chicken: cook skinless, boneless chicken breast fillet in a nonstick skillet until browned and cooked through. I usually butterfly the fillet for faster cooking. Then top with a little reduced-sugar ketchup, oregano, and low fat mozzarella cheese.
  3. Chicken Stir Fry: take desired amount of skinless, boneless chicken breast fillets and cut into cubes. Sauté chicken in a nonstick skillet with chopped onion and bell pepper. When chicken is almost finished, toss in a variety of vegetables, such as snap peas, bok choy, carrots, broccoli, mushrooms, and celery. Flavor with low sodium soy sauce and serve over brown rice.
  4. Chicken Taco Salad: brown ground chicken breast and chopped onion in a skillet with 1-2 tablespoons of low sodium taco seasoning dry mix. When finished, place chicken on a bed of lettuce and garnish with salsa, fat free sour cream, and reduced fat cheese.
  5. Spicy Chicken Burgers: mix half a cup of salsa with one pound of ground chicken breast (add cayenne pepper if you like it hot). Form mixture into four patties. Cook patties on a grill or in a nonstick skillet. Top with reduced fat cheese and serve on a light bun. Garnish with lots of veggies, such as lettuce, tomato, and onion and bell pepper rings. Instead of mayo, try using light Ranch dressing.
